I'd like to talk about miso soup here because miso soup is a very simple soup considered to be a typical home made meal but there are so many varieties and it's very unique to areas or to families. First you need to make a soup stock called dashi. We use dried bonitos or sardines or sea kelps and so on and secondly you put ingredients. You could put tofu, seaweed or leeks and so on. Finally you turn off the gas stove and then add miso, fomented soya bean paste. As I said it's very simple but it's impossible to recreate your mum's taste so I suppose you need to find your own.
